Almond Butter!








I love me some almond butter! I even bought some organic almond butter from Costco yesterday but I don't want to open it yet cause I know once I do it has to be refridgerated and since I want to take it with me to Carolina in two weeks unopened it must remain!

So what's an almond butter lovin' girl to do? Make my own of course!!

I started with some of these:


I think I used about 1 c. of raw unsalted almonds in my mini-food processor. Then I ran it and ran it and ran it. I've burned the motor out of these babies before so I was careful to stop and let it cool down periodically....Here's what it looked like halfway through:



It stays dry and powdery for quite awhile but don't get discouraged. All of a sudden it will start getting all almond buttery. I threw in some cinnamon for extra flavor...mmmm...here's the final product in the food processor:

I put it in a little tupperware...maybe about 1/2 c. worth...it'll be gone in about a day!
